Fresh Tomato and Goat Cheese Salad

Salads should exult the essence of high quality ingredients. Balance the pungent creaminess of fresh herbed-goat cheese with the joyfully tart and juicy sweet explosion of ripe tomatoes. Serve this salad family style to play up the visual appeal of chunks of cheese and big wedges of tomato. Spinach provides a somewhat chalky base to balance out the acidity of the tomatoes and balsamic vinaigrette while also reflecting the richness of the goat cheese.

3 cups Baby spinach leaves
4 oz's. Fresh Goat's Cheese
2 Heirloom Tomatoes, large
2.5 tbsps. Balsamic Vinegar
1.5 tbsps. Olive Oil
0.25 tsp. Salt, fine ground
0.25 tsp. Ground Black Pepper




1) Thoroughly wash and dry tomatoes and spinach.
2) Toss spinach with most of balsamic vinaigrette
3) Lay bed of spinach on a large serving platter.
4) Cut tomatoes into eight wedges each.
5) Lay tomatoes on their sides in a ring emanating from the center of the plate.
6) Cut goat cheese wedge into eight pieces and place two pieces in each quarter of the plate.
7) Drizzle reserved dressing over plate and serve.


Dressing preparation:

1) Blend olive oil and balsamic vinegar and 1/2 tsp of goat cheese thoroughly. Use a fork or wisk.
