1. Spray a large, nonstick skillet with cooking spray. Add chicken strips and cook on low-medium heat 5-7 minutes or until opaque, stirring constantly.
2. Remove chicken from skillet and set aside. Spray cooking spray liberally in skillet. Add vegetables, water and 1 tbsp. sesame seeds. Cook on medium heat 7-10 minutes or until vegetables begin to soften.
3. Add chicken and stir fry sauce into skillet with vegetables and continue to cook for 5 minutes.
4. Transfer stir fry into serving bowl, top with remaining sesame seeds, and serve with brown rice.
Note: We used a pre-packaged stir fry vegetable mix that saved us both time and $. You can often find these at your local market. But if you have the time and like to use your own vegetables just aim for 4 cups chopped.
