A truly tasty finger food to start your meal with or as a party treat its a guarantee hit. These rolls are very easy and fast with water only cleanup yet they taste like you spent a long time making them. There is not only great taste in these delectables but also they are low carb, nutrient dense and have no starches or any additives what-so-ever. So go ahead and enjoy, you can eat all you want and they won't add inches to your waist line.

2.5 cups Broccoli Flower, destemmed
1 cup Soaked Raw Organic Pine Nuts
1 cup Soaked Raw Organic Sunflower Seeds
1 Long Zucchini
1 Medium Tomato
0.5 cup Soaked Organic Sun-Dried Tomatoes
2 tbsps. Olive Oil
3 Medium Garlic Cloves
3 tsps. Celtic Sea Salt
1 tbsp. Ginger, Minced
1 tsp. Ground Organic Black Pepper
1.5 tbsps. Fresh Organic Rosemary Needles, minced
1 tbsp. Organic Sage
1 tbsp. Organic Fresh Basil, minced
1 tbsp. Organic Oregano or Thyme, minced
1 cup Filtered Spring Water




1) For Broccoli filling,combine the following ingredients in your food processor using the "S" blade: brocolli flower, pine nuts, 1/2 cup spring water, lemon juice, nutmeg, 2 tsp. rosemary, 2 cloves garlic and 2 tsp. celtic sea salt.

Blend thoroughly to a slightly grainy Mousse.

2)Now, using a quality Mandoline slice zucchini lengthwise into paper-thin slices.

3)Spread 1 to 2 Tbls Broccoli filling on each zucchini slice and roll. Set aside till your ready to serve. 4)For the topping, combine the following ingredients in your blender: tomato, sun dried tomato, 1/2 cup filtered water, 1 tbsp each minced sage, rosemary, basil and oregano, 1 medium clove garlic, 1 tbsp minced ginger, 2 tbsp. olive oil, 1 tsp. sea salt.

Blend Thoroughly.

To serve:

On a small Appetizer plate put two rolls on a bed of Arugula or Spinach leaves gently spoon Tomato Sauce over the center of the Rolls sprinkle with Fresh cracked Pepper and a few Chunks of chopped Tomato. Caper or more Pine Nuts can also be nice for garnish.
