Roasted Garlic Chicken Pizza

Make chicken pizza just like your favorite Italian restaurant, except with this homemade recipe you can control exactly how healthy you want to make it. A perfect dish to make with the Roasted Garlic Express.

1 large garlic bulb, unpeeled
1 tbsp. olive oil
1 prepared 12 inch pizza crust (preferably whole wheat or multi-grain)
4 oz. can tomato paste
2 cups grated mozzarella cheese
0.5 large red onion sliced
0.5 cup cooked cubed chicken
4 tbsp. chopped fresh basil or 1 tbsp. dried




1. Begin by roasting garlic on your Garlic Roaster Express (conventional oven roasting will work, but may take as long as 2 hours). Remove top of garlic bulb exposing cloves. Add olive oil to the roasting cup. Season oil with salt and herbs. Place garlic into roasting pan, cut side down. Roast for 27 minutes. Let cool for a moment before removing.

2. Using fingers squeeze the paste from the garlic cloves into a bowl. Add the can of tomato paste and mix together until well blended.

3. Spread garlic-tomato paste mixture on the pizza crust. Top with mozzarella cheese, sliced red onion and cooked cubed chicken. Sprinkle with 2 tablespoons basil.

4. Bake pizza until crust is golden brown and cheese bubbles about 8 minutes. Transfer to cutting board. Cool 5 minutes. Sprinkle with remaining 2 tablespoons basil. Cut into wedges and serve.
